I found several recipes on Pancit on the web. I have simply copied it.

Pancit Ingredients

1 large onion minced 4 tablespoons oil (Olive oil) 5 cloves garlic 1 large onion, chopped 3 cups shredded Chinese chard or cabbage 1 large carrot (sliced into julien style/long & thin) snow pea pods french-cut green beans 1/2 teaspoon crushed red pepper 1/3 cup of soy sauce 1 pound of pork, sliced into thin strip 1 pound of chicken breast 1 cup of shrimp (unshelled) patis (fish sauce) to taste Fresh ground pepper to taste 1 pound vermicelli, pancit canton or rice noodles (found in any oriental store) Lemon Preparation

Bring 6 cups of water to boil add pork & chicken w/ one teaspoon of pepper corn and pinch of salt Boil until tender, drain (set aside broth) when the chicken is cooled, flake it & slice the pork into strips and set aside Mince the garlic chop the onion Saute the garlic and onion, then add the chicken, pork, shrimp, carrots, snow pea pods, french-cut beans, cabbage, red pepper add patis stir fry until done and set aside Preparation of the Noodles

wash the noodles under warm water Drain water using strainer *Boil reserved broth add soy sauce and noodles to boiling broth cover & simmer until cooked Mix all the ingredients together. Add enough soy sauce to make the noodles brown add fresh ground pepper Garnish with sliced lemon

Recipe number 2 Pancit (Pansit Lo Mein) Ingredients • Garlic • Onion • Vegetable Oil • Soy Sauce • Oyster Sauce • Ground Black Pepper • 3 Pcs. Chicken Bouillon • 2 Pckgs. of Rice Noodles(Bihon) • 1lb. Pork Lean Meat • 1 lb Chicken Breast (Skinless and Boneless) • Optional: 1/2lb. Shrimp • 2 medium size carrots • 1/2 lb. green beans • 1 cup Brocolli • 1/2 cup Cauliflower • 1 cup Celery • 1 cup Cabbage • 1/2 Cup Green Bell Pepper • Optional: Fresh Mushrooms and Fresh Young Corn Preparation • In a pot add 5 cups of water, season with salt, pepper and onions. Cover and simmer for at least 20 minutes. • When done, remove meat from pot and cut into desired pieces. • Set aside meat and stock. • Cut all vegetables into bite size pieces. Set aside. • In a wok, saute garlic and onion in hot oil until golden brown, add meat and season with ground pepper, soy sauce, oyster sauce and chicken bouillon. • Add Shrimp if desired. Stir-fry. • Add 1 cup of stock. • Allow to cook for five minutes then add carrots and green beans. • Cover and cook for another 2 minutes. • Add brocolli and cauliflower, cook until half done. • Add celery cabbage and green pepper. DO NOT OVERCOOK THE VEGETABLES! • Transfer the cooked vegetables to another pan, set aside, leave sauce in the wok. • Add 2-3 cups of stock, season with soy sauce, oyster sauce, pepper and 2 pcs. of chicken bouillon, bring to a boil. • Turn the heat to low-medium and add the Rice Noodles, stir and mix noodles thoroughly. • Cook until sauce is absorbed by the noodles. • Turn off the heat, cover for at least 4 minutes. • Add cooked vegetables to the noodles and mix carefully or just garnish on top of the noodles. Serve hot, garnish with sliced sweet onions and chopped green onions. Serves 4-6. Noodles can be purchased from any ORIENTAL STORE. Try noodles made in the Philippines, we have different varieties. You can use any of them, or you can mix them too. Enjoy!!

Recipe number 3 Filipino pancit (noodles) Categories: Ethnic, Filipino, Pasta, Poultry, Vegetables Yield: 1 Recipe Ingredients: 1/2 c Onions; chopped 2 lg Cloves garlic; crushed 2 c Cabbage; diced 1 c Celery; sliced 2 c Chicken breast; poach; cut Salt/pepper 16 oz Filipino-style noodles 2 T Cooking oil 3 c Chicken broth Saute garlic and onions in oil. Add chicken and broth, bringing to a boil. Add vegetables. Cook until tender. Add noodles and cook until done. Adjust seasonings. Serve hot or cold.
