For Leche Flan 12 egg yolks from fresh eggs 2 big alpine evaporated milk 2 cups white sugar 1 teaspoon vanilla extract Separate the egg yolk from the white , see to it that no egg white is mixed in the egg yolk container . Beat with a fork then pour in slowly the milk ,vanilla extract, then little by little mix in the sugar while continously beating thouroughly, around 30 minutes to 45 minutes until foamy . Then let it rest for one hour before pouring into the pan . While resting the flan mix , prepare the pan , place ample amount of white sugar into the leche flan pan , then in a slow heat , heat the pan with sugar ,seeing to it that the bottom of the pan is covered with the caramelized sugar but not overcooking the sugar ,just golden color. Then take it out of the fire and let it cool down until sugar is hard to touch. Also while preparing the pan , boil enough water on the boiler , or you can use ordinary kettle with steamer pan . When the water is steaming , pour the rested flan on the prepared leche flan pan, cover the pan , let it rest for another ten minutes , then put it on top of the steamer . Cover the steamer , steam for 20 minutes , test with a toothpick, if no flan stick with the toothpick ,then its cooked . Cool it down before putting in the refrigerator prior to serving . When serving , invert the pan in the flan plate , to show the golden melted sugar on the bottom of the flan . Slice to desired serving pieces. Enjoy !
