I think this one's simpler...
Recipe: 8 egg yolks; 1 big can evaporated milk; 1 big can condensed milk; 1/2 tsp. calamansi rind (balat), finely chopped;
Mixing Procedure:
Beat egg yolks, pour in evap milk, then condensed milk, add rind and let rest for an hour. The rind is added to remove the "fishy" smell and aftertaste of the eggs. Use fine strainer to remove rind from mixture, better yet, use a clean fine cotton cloth to do so. This will remove fine egg whites from the mixture as well.
Same procedure for cooking.
