This is a re-post: It is easy to make tocino using premixed bought from the oriental stores. Just thin slice your meat (pork or beef), then stand overnight in the fridge. Remove desired amount to cook in a frying pan. Add a little water to soften the meat before frying. Tastes like homemade!
But here's a recipe from scratch: 2 lbs pork belly, sliced bacon thin * 1/4 cup sugar * 1/4 tsp salt peter * 1/4 cup vinegar * 1 tsp salt *** 1. Slice meat thinly. Combine the rest of the ingredients and stir until sugar is completely dissolved. Pour mixture over pork slices in a thick plastic container, making sure the slices are evenly coated. Let stand in the fridge for at least a day. Fry in oil to desired doneness or bake on a cooke sheet at 350 degrees for 40 minutes.
